
Bowl of Pho
After nearly 15 years working as a professional Research & Development Chef in the frozen food industry, I’m ready to explore the world in search of new ideas, flavors and textures. Born and raised in Dallas, my career has provided me the opportunity to work and live in San Francisco, Montreal and currently Minneapolis. I’ve been a member, leader and architect of successful research & development teams. I’m proud to say I’ve worked alongside some of the brightest chefs and food scientists in my industry. The last three years, possibly the most rewarding to date, I occupied the role of Director of Research & Development for one of the largest food manufacturers in the United States. I’ve personally developed products for nearly every retailer in America, restaurant chains, large food corporations and airline carriers around the globe. Most notably, I developed a full line of frozen products for the best selling cookbook “Joy of Cooking “. I recently resumed my consulting career as owner and primary development chef for Culinary Design Studio, located in downtown Minneapolis.
September 24th, 2009 I leave for South East Asia to embark on a three month culinary sabbatical. I plan to visit Viet Nam, Singapore, Malaysia, Laos and Thailand. The food of this region is not only the result of what ground and climate will produce, but also of who has been there over the course of centuries. Throughout South East Asia, Street Food and Hawker Stall cooks strive for a harmonious balance of textures, temperatures and flavors: sweet, sour, salty, bitter. When I decided to embark on a culinary journey, it didn’t take long to decide on this part of the world. I’m very excited and looking forward to hitting the road with an open mind and willingness to explore. Undoubtedly the experience will provide me additional tools and a new set of eyes. My Bowl of Pho is dedicated to documenting my adventure. I hope to capture a few interesting moments during my trip so you can get a sense of what I’m experiencing.
